Black Eyed Pea and Sausage Soup

- 1 can black eyed peas (do not drain) shopping list
- 1/2 lb. bulk sausage (can use mild or hot, depending on how spicy you like it) shopping list
- 1/4 cup chopped onion shopping list
- 1 garlic clove, finely chopped shopping list
- 1 cup canned tomatoes shopping list
- 1/4 tsp black pepper shopping list
- 1/4 tsp oregano shopping list
- 1/2 to 1 cup grated cheese shopping list
How to make it
- Cook the sausage in a large frying pan, crumbling with a fork as it cooks. Drain fat from pan.
- In same pand, add green pepper, onion and garlic. Cook 5 minutes stirring the vegetables into sausage. Add tomatoes and seasonings. Stir well.
- Pour in black eyed peas with the liquid in can.
- Cover and simmer slowly for 15 minutes. Serve very hot with grated cheese sprinkled on top.
- If reheating soup, sprinkle cheese on when ready to serve.
