How to make it

  • Melt the butter in a Dutch oven.
  • Saute the onion, celery, potatoesand carrots for 15 minutes.
  • Add garlic and saute for 30 seconds.
  • Add enough water to cover the ingredients.
  • Add bay leaf and basil.
  • Cover and simmer for 25 minutes.
  • Mash the vegetables with a fork or potato masher.
  • Add stock and bacon to the pot.
  • Heat through.
  • **Can increase thickness with instant mashed potato flakes.

    Does sound like it would be delicious, although in Russia we never made this. Russians do eat a lot of potatoes, just because it is the cheapest vegetable they can buy and often grow in their garden. I'll e-mail this to my mom, she should enjoy it!
