To make this vegetarian, saute the onions, garlic and scallions in 1-2 Tbsp. extra virgin olive oil. Add a dash or two of liquid smoke to get that smokey flavor the sausage would impart. If you like, chop some Tofurkey Italian sausage (or other sausage substitute) and throw into the pot for the last 15 minutes or so.
