Ingredients
  • 1 pound hot italian sausage, uncased and broken up
  • 1 1/2 cups chopped onion
  • 6 chopped scallions
  • 6 cups water
  • 1 to 2 pounds potatoes, diced
  • 4 cups coarsely chopped green cabbage
  • 1 teaspoon salt
  • 1 minced garlic clove

Directions
  1. Brown sausage well in bottom of soup pot.
  2. Add onions and scallions and cook for 1 minute.
  3. Stir in water, potatoes, cabbage and salt.
  4. Bring to a boil.
  5. Reduce heat and simmer for 45 minutes.

Super easy and delicious! You could add a little chopped potatoes, too. Cabbage, potatoes and sausage go great together.


This sounds soo yummy, especially with the cooler weather coming.

Alterations


To make this vegetarian, saute the onions, garlic and scallions in 1-2 Tbsp. extra virgin olive oil. Add a dash or two of liquid smoke to get that smokey flavor the sausage would impart. If you like, chop some Tofurkey Italian sausage (or other sausage substitute) and throw into the pot for the last 15 minutes or so.
