How to make it

  • Trim fennel stalks flush with bulbs and trim any discolorations from bulbs.
  • Cut bulbs lengthwise in half or into quarters then cut out most of the cores.
  • Leave enough to keep pieces intact and discard cores.
  • In a heavy skillet warm oil over moderate heat and cook garlic until pale golden.
  • Discard garlic and cook fennel stirring occasionally until golden brown about 10 minutes.
  • Add broth and salt to taste then simmer partially covered stirring occasionally for 20 minutes.
  • Allow to sit 5 minutes then serve immediately.
