How to make it

  • Preheat oven to 350 degrees. Grease a 9-inch loaf pan.
  • Cook bacon in skilled until crisp. Drain, then dice coarsely. Remove all but 2 tablespoons of fat. Add onion and cook for 2 minutes or until tender.
  • Mix flour, baking powder sugar, salt, pepper and cayenne in large bowl.
  • Whisk eggs, sour cream and butter until blended; stir in bacon and onion. Pour liquid mix over dry ingredients and fold in just until combined. .
  • Put into prepared pan and bake for 50 minutes or until it tests done.
  • Cool in pan for 10 to 15 minutes, then cool completely on a wire rack.

    This is easy and quick! I love bacon breads and I added a chopped apple with the onion. Delish!
    I almost think it needs a little more salt-with 8 slices of bacon you say?

    I made mine in a 9x13 pan and it came out with a nice crispy top. Wonderful. I"ll be making more of this for sure!
