Baked Mustard Coated Chicken

Wonderful breaded and baked chicken with some dry mustard in the mix to give it a little zing.
Ingredients
- 1c lite soy sauce shopping list
- 1/2c honey, shopping list
- 3Tbs ground mustard,divided shopping list
- 2-3lbs. chicken leg and thigh quarters shopping list
- 11/2c unseasoned bread crumbs shopping list
- 1tsp paprika shopping list
- 1/4tsp sal1/2tsp pepper. shopping list
- 2Tbs veg. oil shopping list
How to make it
- Mix soy sauce,honey,oil and 1Tbs mustard in plastic bag. Add chicken,seal,push chicken around to evenly coat. Refrigerate 15 mins. Remove chicken from bag,brushing off any excess marinade;discard marinade.
- Stir breadcrumbs,remaining 2Tbs mustard,paprika,salt and ground pepper in shallow bowl. Roll chicken in breadcrumb mixture. Place chicken in single layer on rimmed baking sheet. Spray chicken with non-stick cooking spray.
- Bake in pre-heated 350 oven for 25-30 mins or till cooked through.
- For Mustard-Tarragon Chicken: Substitute 1tsp. tarragon leaves for paprika. Prepare as directed.
