Baked Mustard Coated Chicken Recipe
Wonderful breaded and baked chicken with some dry mustard in the mix to give it a little zing.

Ingredients
  • 1c lite soy sauce
  • 1/2c honey,
  • 3Tbs ground mustard,divided
  • 2-3lbs. chicken leg and thigh quarters
  • 11/2c unseasoned bread crumbs
  • 1tsp paprika
  • 1/4tsp sal1/2tsp pepper.
  • 2Tbs veg. oil

Directions
  1. Mix soy sauce,honey,oil and 1Tbs mustard in plastic bag. Add chicken,seal,push chicken around to evenly coat. Refrigerate 15 mins. Remove chicken from bag,brushing off any excess marinade;discard marinade.
  2. Stir breadcrumbs,remaining 2Tbs mustard,paprika,salt and ground pepper in shallow bowl. Roll chicken in breadcrumb mixture. Place chicken in single layer on rimmed baking sheet. Spray chicken with non-stick cooking spray.
  3. Bake in pre-heated 350 oven for 25-30 mins or till cooked through.
  4. For Mustard-Tarragon Chicken: Substitute 1tsp. tarragon leaves for paprika. Prepare as directed.
