Pistachio Pear Pork With Noodles

- 8 ounces thinly sliced pork tenderloin (about 1/2 whole tenderloin) shopping list
- 1 teaspoon olive oil shopping list
- 1/4 teaspoon crushed sage shopping list
- 1 clove garlic, crushed shopping list
- 1/4 cup marsala shopping list
- 1/8 cup of chicken broth shopping list
- 1/4 teaspoon salt shopping list
- several grinds of black pepper shopping list
- 1 large ripe pear, cored and cut into 3/4-inch cubes shopping list
- 2 tablespoon shelled and coarsely chopped pistachios shopping list
- 1 tablespoon butter shopping list
- 2 cups cooked noodles, kept warm (use fresh papparadelle, if you can find them)-or slice up rolled fresh lasagna sheets into strips shopping list
- 2 tablespoons grated parmesan cheese shopping list
How to make it
- In a large nonstick skillet, heat oil over high heat.
- Stir-fry pork until no longer pink, 2-3 minutes.
- Add garlic, Marsala, chicken broth and sage.
- Cook about 1 minute to reduce liquid by half.
- Season with salt and pepper.
- Add diced pears and pistachios, stir.
- Add a knob of butter.
- When butter is just melted, add hot pasta, toss.
- Garnish with Parmesan cheese.
