Pistachio Pear Pork With Noodles Recipe
With fresh pasta, sliced pork, pistachios and pears become an elegant dinner for two. Crusty bread and a leafy salad are all you need.

Ingredients
  • 8 ounces thinly sliced pork tenderloin (about 1/2 whole tenderloin)
  • 1 teaspoon olive oil
  • 1/4 teaspoon crushed sage
  • 1 clove garlic, crushed
  • 1/4 cup Marsala
  • 1/8 cup of chicken broth
  • 1/4 teaspoon salt
  • several grinds of black pepper
  • 1 large ripe pear, cored and cut into 3/4-inch cubes
  • 2 tablespoon shelled and coarsely chopped pistachios
  • 1 tablespoon butter
  • 2 cups cooked noodles, kept warm (use fresh papparadelle, if you can find them)-or slice up rolled fresh lasagna sheets into strips
  • 2 tablespoons grated Parmesan cheese

Directions
  1. In a large nonstick skillet, heat oil over high heat.
  2. Stir-fry pork until no longer pink, 2-3 minutes.
  3. Add garlic, Marsala, chicken broth and sage.
  4. Cook about 1 minute to reduce liquid by half.
  5. Season with salt and pepper.
  6. Add diced pears and pistachios, stir.
  7. Add a knob of butter.
  8. When butter is just melted, add hot pasta, toss.
  9. Garnish with Parmesan cheese.
