Ingredients

4 large eggs

1/2 cup sour cream

1 package frozen broccoli florets, thawed and drained well (Press hard in colander to remove water; then use a paper towel to absorb all of the excess water after you’ve drained broccoli ~ you want this to be relatively dry before you combine with the egg mixture.

1 uncooked, deep dish pie crust, Pillsbury a must here

1 pound Swiss cheese, grated

Note: You can substitute spinach for the broccoli; just follow the same rule for draining the water out of it.

Directions

Preheat oven to 350.

Beat eggs ~ use hand whisk or mixer.

Add sour cream and mix well.

Stir in broccoli and cheese, then pour into unbaked pie crust.

Bake for about 15-20 minutes or until firm and golden brown on top. DO NOT OVERCOOK!

Serve hot with crispy bacon or sage sausage and white grapes on the side. Yumm!
