How to make it

  • Mix sugar, flour, baking powder, 2 eggs, pineapple and bake at 350 degrees for 30 minutes in a greased jelly roll pan.
  • Mix together melted butter, evaporated milk and 3/4 cup sugar ; boil this for 10 minutes in a saucepan.
  • Add coconut and chopped nuts.
  • Frost cake immediately.

    This really sounds good. I'm going to try it tomorrow when I have all the grand kids here. I love pineapple and coconut and pecans are always a winner in my book. you get a 5 from for this one yum yum

    This sounds like a nice recipe but why is it called a "rubber" cake? I've made some baking mistakes in the past and really did come up with a few cakes that could bounce across the backyard lawn. The dogs loved these! Thanks for the new recipe, Zena! I'll just have to try this!
