This is a delicious cake my neighbor, Ladonna makes...She has made this for the community on lots of occasions..Its quick and easy and so good...

Ingredients
  • 2 cups sugar
  • 2 cups all purpose flour
  • 2 heaping teaspoons baking powder
  • 2 eggs
  • 1 can crushed pineapple (large size-juice and all)
  • 6 oz evaporated milk
  • 3/4 cup sugar
  • 1 stick butter, melted
  • 1 cup chopped pecans
  • 1 cup coconut

Directions
  1. Mix sugar, flour, baking powder, 2 eggs, pineapple and bake at 350 degrees for 30 minutes in a greased jelly roll pan.
  2. Mix together melted butter, evaporated milk and 3/4 cup sugar ; boil this for 10 minutes in a saucepan.
  3. Add coconut and chopped nuts.
  4. Frost cake immediately.

This sounds like a nice recipe but why is it called a "rubber" cake? I've made some baking mistakes in the past and really did come up with a few cakes that could bounce across the backyard lawn. The dogs loved these! Thanks for the new recipe, Zena! I'll just have to try this!


This really sounds good. I'm going to try it tomorrow when I have all the grand kids here. I love pineapple and coconut and pecans are always a winner in my book. you get a 5 from for this one yum yum
