Rubber Cake

This is a delicious cake my neighbor, Ladonna makes...She has made this for the community on lots of occasions..Its quick and easy and so good...
Ingredients
- 2 cups sugar shopping list
- 2 cups all purpose flour shopping list
- 2 heaping teaspoons baking powder shopping list
- 2 eggs shopping list
- 1 can crushed pineapple (large size-juice and all) shopping list
- 6 oz evaporated milk shopping list
- 3/4 cup sugar shopping list
- 1 stick butter, melted shopping list
- 1 cup chopped pecans shopping list
- 1 cup coconut shopping list
How to make it
- Mix sugar, flour, baking powder, 2 eggs, pineapple and bake at 350 degrees for 30 minutes in a greased jelly roll pan.
- Mix together melted butter, evaporated milk and 3/4 cup sugar ; boil this for 10 minutes in a saucepan.
- Add coconut and chopped nuts.
- Frost cake immediately.

This sounds like a nice recipe but why is it called a "rubber" cake? I've made some baking mistakes in the past and really did come up with a few cakes that could bounce across the backyard lawn. The dogs loved these! Thanks for the new recipe, Zena!...more
