How to make it

  • Heat oven to 300 degrees.
  • In a small bowl, mix together sugar and cinnamon; set aside. In a large bowl, beat the egg white until foamy. Stir in nuts and mix until nuts are well coated and sticky. Sprinkle cinnamon/sugar mixture over the nuts and stir until the mixture completely coats nuts. Spread the coated nuts in a single layer on a parchment paper lined baking sheet (the parchment paper makes cleanup a LOT easier!). Bake 30 mins. or until nuts are “dry”. Place on paper towels. Break apart any nuts stuck together so all of the nuts are separate. Cool completely. Store in an airtight container.
  • Note: I use the really strong Vietnamese cinnamon from Penzey’s, without decreasing the amount called for, and we think the nuts are exceptional! The number of servings you get will really depend on the size of the pecan halves you use and the type of containers you pack them in for gifts.
