Texas Spinach And Egg Salad With Creamy Vinaigrette Recipe
TEXAN SPINACH AND EGG SALAD WITH CREAMY VINAIGRETTE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Massey Estate in Dallas, Texas in 1981.

Ingredients
  • 4 cups fresh spinach trimmed washed and thoroughly drained
  • 2 cups torn leaf lettuce
  • 4 hard cooked eggs peeled and coarsely chopped
  • Dressing:
  • 1 shallot finely chopped
  • 1/2 cup extra virgin olive oil
  • 1/4 cup white wine vinegar
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon Dijon mustard
  • 1/4 cup heavy cream
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Combine spinach, lettuce and eggs in large bowl and toss gently.
  2. Combine shallot, olive oil, vinegar, herbs and mustard in bowl.
  3. Whisk to form emulsion then whisk in cream and season with salt and pepper.
  4. Pour over greens and toss gently.
