How to make it

  • Combine breadcrumbs, orange rind, salt, and pepper.
  • Dip chicken in orange juice and roll in crumb mixture.
  • Place skin side up in buttered 15 x 10 x 1-inch jelly roll pan.
  • Bake at 350 degrees for 30 minutes.
  • Combine remaining ingredients; heat until butter is melted.
  • Pour over chicken and bake an additional 30 minutes, basting occasionally.

    This was very tasty. Unfortunately, I didn't have an orange to zest and I think that would have been a nice touch. I guess the 1/2 cup of juice was to dip the chicken in? Or was it meant to be in the sauce? I didn't put it in the sauce and I think it could have used it. The sauce tasted mostly like butter (to me). I was a bit confused about that. I used skinless breasts and was glad I did as I served this with rice and poured on some leftover sauce. Put this in IMI on 12/14/14
