How to make it

  • Dissolve yeast in 1/4 cup of the warm water.
  • Let yeast stand for about 10 minutes.
  • Stir in the rest of the water.
  • Mix 4 cups all purpose flour and salt in a large mixing bowl.
  • Add the yeast and enough additional flour to make a stiff dough.
  • Knead dough for 10 minutes on lightly floured board OR until dough is elastic.
  • Form the dough into a ball, coat with butter, place in bowl.
  • Cover the bowl with a damp towel and let rise for 45 minutes.
  • Pinch off small dough ball and form into a 20" long x 1/2" diameter rope.
  • Form dough rope into pretzel shape (OR bake them as sticks, patties, etc.).
  • Preheat oven to 475 degrees F.
  • Butter a baking sheet.
  • Bring to a boil 4 cups of water.
  • Dissolve baking soda in boiling water.
  • Drop shaped pretzels into boiling water .
  • Allow to simmer until pretzels float to the surface.
  • Remove pretzels with slotted spoon or spider.
  • Drain pretzels on paper toweling.
  • Place pretzels onto buttered baking sheet.
  • Sprinkle with Kosher salt, to taste.
  • Bake for 12 minutes OR until golden.

    I was skeptical at first. Like a previous reviewer, my dough was flaking apart and didn't want to stick together at all (with only 4C flour). Maybe because I live at high elevation (Denver)? Anyhow, rather than trash it, I sprinkled more warm water as I kneaded and was eventually able to create a somewhat-formed ball. One note: if you use a good sized stock pot for the boiling step, you're going to need to double the amount of water and baking soda. And you should probably use Pretzel Salt instead of Kosher (if you can find it)... just for visual appeal. Very labor-intensive for 8 little pretzels, but SO good and totally Philly-Authentic!

    Thought dough might be dry using only 4 cups of flour, but instead of tossing the dough as another user did, I made the pretzels. Turned out great!!! Thanks so much for the recipe!

    Very disappointed - as a cook and not a chef or baker i follow recipes because i do not know the correct proportions. First i was expecting sugar to activate the yeast - was surprised bu tried it. Second, the amount of water 1 1/4 cups is not enough to make a dough ball: instead you get a lot of lour and a very flaky mess that does not stick together. Dumped it in garbage, could not get mixture right based on this recipe.

    Wow. I never expected real pretzels to be so easy to make so perfectly at home! Thanks so much. I've made them a few times since discovering your recipe a couple of weeks ago, and have a much happier family as a result! I now make the dough in my food processor, putting flour, salt & yeast in first, and slowly adding hot water (hotter than usual for proofing yeast). "Kneading" accomplished by 2 minutes of a whirring blade. I feel like I'm cheating, but it works perfectly! I learned this shortcut from Bernard Clayton's book. Thanks again!

    These are a tad labor-intensive, but truly well worth the effort. Thanks so much for the 5. Never realized that this one would make it as big as it has. I will absolutely check out "Kids Stuff"!
