Easy dish. Be sure to drain the spinach as well as you are able after sauteing. The breadcrumbs don't absorb as much as you'd think. You can change up the cheeses as you prefer.

I make a similar spinach dish, ecxept bake the spinach in between the phyllo dough. This one sounds like a nice lighter version. Love the combo of cheeses in this!
