Spinach Baked with Three Cheeses

- 3 tablespoons olive oil shopping list
- 2 - 10 ounce bags baby spinach, coarsely chopped shopping list
- 1 cup finely chopped onion shopping list
- 1/2 cup crumbled feta cheese shopping list
- 1/2 cup grated Edam cheese shopping list
- 1/4 cup crumbled Roquefort cheese shopping list
- 2 tablespoons fresh dill (or more!) shopping list
- 2 tablespoons fresh breadcrumbs shopping list
- 1 large egg yolk shopping list
How to make it
- Preheat oven to 350 degrees F.
- Lightly butter an 11x7x2 baking dish.
- Mix onion, cheeses, dill, breadcrumbs and egg yolk in large bowl.
- Heat oil in large pot over medium-high heat.
- Add spinach.
- Saute until wilted and juices evaporate, about 3 minutes.
- Transfer spinach to a strainer and drain well.
- Arrange spinach over bottom of prepared dish.
- Sprinkle with cheese mixture.
- Bake for 20 minutes or until heated through.
- Preheat broiler.
- Broil spinach and cheese until cheese is golden on top, watching closely.

I make a similar spinach dish, ecxept bake the spinach in between the phyllo dough. This one sounds like a nice lighter version. Love the combo of cheeses in this!
