Apricot Walnut Bars

- 1-1/3 c. all-purpose flour shopping list
- 2/3 c. sugar shopping list
- 1/2 t. cinnamon shopping list
- 1/2 t. salt shopping list
- 1-1/2 sticks cold, unsalted butter cut into tablespoon sized pieces shopping list
- 2 large egg yolks shopping list
- 1 t. vanilla shopping list
- 1/2 c. apricot preserves shopping list
- 3/4 c. chopped walnuts shopping list
How to make it
- Put oven rack in middle position and preheat to 375 degrees.
- Butter a 9" square baking pan, line with parchment and then butter the parchment, leaving a slight overhang.
- In food processor, pulse the flour, sugar, cinnamon, and salt until combined:
- Add the butter and pulse until mixture resembles coarse meal with some pea-sized butter lumps.
- Add yolks and vanilla and pulse just until clumps of dough form, about 30 seconds
- Line pan with parchment paper.
- Press 3/4 of the dough mixture onto the bottom of the pan. Then spread with the apricot preserves.
- Crumble remaining dough mixture over preserves and sprinkle evenly with walnuts:
- Bake until top is golden brown and preserves are bubbling; 20-25 minutes.
- Let cool completely in pan on wire rack.
- Lift from pan by grasping both ends of the parchment. Cut into bars.
- This recipe would be delicious with any flavor of preserves; add a dusting of a cinnamon/sugar mixture over the walnuts before baking.
