Impromptu Chicken Stew

- 2 Tbsp. olive oil shopping list
- 2 boneless, skinless chicken breasts, cubed shopping list
- 1 small onion chopped shopping list
- 1 stalk celery with leaves, chopped shopping list
- 1 large carrot chopped shopping list
- 2 potatoes cubed shopping list
- 1/2 tsp. thyme shopping list
- 1/2 tsp. basil shopping list
- 1/2 tsp. oregano shopping list
- 2 Tbsp. soy sauce shopping list
- hot sauce to taste (I used habanero, it's got a nice flavor and good kick) shopping list
- 1 1/2 cups water shopping list
- 1 can (12 oz.) beer (I used Asahi, a Japanese beer - really good!) shopping list
- salt and pepper to taste shopping list
How to make it
- In a hot skillet, heat olive oil.
- Saute onions until browned. Add soy sauce to de-glaze the pan.
- Add chicken and cook until done.
- Add spices, celery, carrot and beer. Cook about 20-30 minutes.
- Add potatoes and water.
- Cook another 30 or so minutes until thick and rich.
- Serve with a nice bread and real butter!
