Spinach And Sausage Shells Recipe
The spinach in this dish clings to the shell pasta and makes itself into a thing of beauty. We serve four as a main dish and 6 to 8 as a side. All this flavor comes from a stovetop preparation!

Ingredients
  • 1 pound large shell pasta OR any large pasta of your choice
  • 1 tablespoon vegetable oil
  • 1/2 pound hot OR mild Italian sausage, uncased
  • 1/2 bunch green onions, chopped
  • 3 cloves garlic, finely chopped
  • 1 teaspoon dried basil, crumbled
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 10 ounces frozen chopped spinach, thawed and drained
  • 6 ounces tomato paste with Italian herbs
  • 1 1/2 cups water
  • 1/4 cup grated Parmesan cheese

Directions
  1. Put pasta on to cook.
  2. Meanwhile saute the sausage in a skillet, breaking it up as you go.
  3. Stir in the onion, garlic, basil and salt and pepper.
  4. Cook and stir for 2 minutes.
  5. Stir in spinach.
  6. Combine well.
  7. Heat spinach through.
  8. Drain pasta.
  9. Combine pasta with spinach in skillet.
  10. Add the tomato paste and the water to the skillet.
  11. Bring dish to the boil.
  12. Stir until smooth.
  13. Sprinkle with grated Parmesan cheese.
