  • Topping
  • 4 Tb butter
  • 7 Tb dark brown sugar
  • 1 (16 oz.) can crushed pineapple
  • 6 maraschino cherries, halved
  • ====================================================
  • Cake Batter
  • 1/4 cup sugar
  • 1/4 cup butter
  • 1 egg, separated
  • 1 cup sifted cake flour
  • 1 1/2 tsp. baking powder
  • 1/2 cup pineapple juice
  • 1/2 tsp vanilla

Directions
  1. Oven Temp ~ 350 degrees Baking Time ~ 25 Min.
  2. Pan Type ~ 12 cup muffin pan
  3. ===================================================
  4. Preheat oven,
  5. Melt butter in saucepan and add brown sugar.
  6. Cook over low flame until well blended.
  7. Remove from heat.
  8. Drain the juice from pineapple and save, then stir crushed pineapple into the sugar mixture.
  9. Divide the topping equally into the bottom of each greased muffin cups and add a maraschino cherry half (if desired).
  10. ====================================================
  11. To prepare the batter:
  12. Cream the butter, add the sugar, and beat until fluffy.
  13. Beat egg yolk and add to mixture.
  14. Sift the flour, and baking powder together; add alternately with the pineapple juice.
  15. Add vanilla.
  16. Beat the egg white until stiff and fold into the batter.
  17. Pour this batter over the topping and bake.
  18. Cool, then turn cupcakes carefully onto a cake platter, pineapple side up.
