Roasted Butternut Squash Lasagna

- 3 lbs of butternut squash, peeled, seeded and cut into 1/4 to 1/2 inch thick slices shopping list
- 3 Tbl olive oil shopping list
- 1/2 tsp salt shopping list
- 1/4 C butter shopping list
- 6 garlic cloves, minced shopping list
- 1/4 C flour shopping list
- 1/2 tsp salt shopping list
- 4 C milk shopping list
- 1 Tbl snipped fresh rosemary or 1 tsp dried, cut ot to taste shopping list
- 9 no boil lasagna noodles shopping list
- 1 /13 c shredded fresh Parmesan (5 1/2 oz) shopping list
- 1 C whipping cream shopping list
How to make it
- Preheat oven to 425F
- Prepare the Roast Squash
- Lightly grease a 15x10x1 baking pan
- Place squash in the prepared pan, add oil and 1/2 tsp of salt; toss gently to coat
- Spread in an even layer and roast, uncovered for 25 to 30 minutes or until squash is tender
- Reduce oven temp to 375
- To make sauce
- In a largesuacepan, heat butter over medium heat
- add garlic; cook and stir for 1 minute
- Stir in flour and 1/2 tsp salt
- Gradually stir in mil
- Cook and stir until thickened and bubbly; stir in squash and rosemary
- Lightly grease a lasagna pan or 9x13 baking pan
- To assemble
- Spread about 1 C of the sauce over the bottom of the prepared pan
- Layer three of the noodles in the pan
- Spread with 1/2 of the remaining sauce
- Sprinkle with a 1/3 of the Parmesan cheese
- Repeat layering noodles, sauce and cheese two more times
- Pour whipping cream over layers Sprinkle with remaining 1/3 C Parmesan
- Cover pan with foil and bake for 40 minutes
- Uncover and bake about 10 minutes more until edges are bubbly and top lightly browned
- Let stand for 10 minutes before serving
