Creme Brulee-ish Cheesecake Bars

If you like creme brulee or caramel or toffee flavors, this one’s for you. It takes just a few minutes of prep, and, voila! Yummy for your tummy! Enjoy!
Ingredients
- 7 honey graham crackers, crushed shopping list
- 2/3 cup granulated sugar, divided shopping list
- 3 tablespoons butter, melted shopping list
- 2 8-oz. packages cream cheese (Neufchatel) shopping list
- 1 teaspoon vanilla extract shopping list
- 2 whole eggs shopping list
- 1 egg yolk shopping list
- 1/2 cup light brown sugar, firmly packed shopping list
- 1 tablespoon water shopping list
How to make it
- Preheat oven to 350.
- Mix graham cracker crumbs, 2 tablespoons granulated sugar and butter. Press evenly into bottom of 9” square baking pan.
- Beat cream cheese, remaining granulated sugar and vanilla extract on medium speed until well blended. Add whole eggs, one at a time, and egg yolk; mix well. Pour over crust.
- Bake for 30 minutes or until center is almost set. Cool completely, then refrigerate for at least three hours.
- Preheat broiler. Mix brown sugar and water then spread over cheesecake. Broil one minute or until topping is hot and bubbly. Serve warm. Yumm!
