Ravioli With Zucchini And Walnuts

- 1 - 9 oz. pkg. refrigerated whole wheat or plain cheese ravioli shopping list
- 1/2 c. walnuts, coarsely chopped shopping list
- 2 TBSP. extra-virgin olive oil shopping list
- 2 medium zucchini, halved lengthwise and sliced shopping list
- 6 scallions (green onions), sliced on the diagonal 1/4 inch thick shopping list
- 1/2 c. milk shopping list
- 1 c. finely shredded parmigiano Reggiano cheese (4 oz.) or grated parmesan cheese, divided shopping list
- 1/8 tsp. sea salt shopping list
- 1/8 tsp. fresh cracked black pepper shopping list
How to make it
- In large saucepan, cook refrigerated ravioli according to package directions; drain.
- Meanwhile, in large skillet cook nuts in hot oil over medium heat for 2 to 3 minutes; remove with slotted spoon. Add zucchini and green onion. Cook and stir for 2 to 3 minutes or until crisp-tender.
- Add drained pasta, nuts, milk, and 3/4 c. of cheese to skillet. Cook and toss for 1 minute. Season to taste with salt and pepper. Transfer pasta mixture to serving bowl. Sprinkle with remaining cheese. Serve immediately.
