Bacon Bok Choy

- 2 pounds baby bok choy shopping list
- 4 slices bacon, chopped shopping list
- 1/2 small red onion, minced shopping list
- 1 tsp garlic, minced shopping list
- 1 tsp olive oil shopping list
- 1 tsp red pepper flakes shopping list
- salt, to taste shopping list
How to make it
- In a large skillet, over medium heat, cook bacon until crispy. Remove and drain the fat, saving 1 tablespoon in the skillet.
- Now, add the onion, garlic, olive oil, and red pepper flakes. Stir over medium heat and cook until the onions start to become tender.
- Add the bok choy, and put a lid on the pan. Let it cook for 3-5 minutes, then remove the lid; stir and continue to cook until it is tender, but still has a crunch (around 2 minutes).
- Add in the bacon, season with salt. Serve piping hot.

I see that this recipe was posted two years ago but let me tell you...its still delicious! I made it in addition to a creamy pesto shrimp recipe and oh my was it good. Thank you so much!
