How to make it

  • In a large skillet, over medium heat, cook bacon until crispy. Remove and drain the fat, saving 1 tablespoon in the skillet.
  • Now, add the onion, garlic, olive oil, and red pepper flakes. Stir over medium heat and cook until the onions start to become tender.
  • Add the bok choy, and put a lid on the pan. Let it cook for 3-5 minutes, then remove the lid; stir and continue to cook until it is tender, but still has a crunch (around 2 minutes).
  • Add in the bacon, season with salt. Serve piping hot.

    This is interesting! I love baby bak choys but I never thought of adding bacon to them, usually just stir-frying with garlic and oyster sauce. I got some leftover bacon and Kai Lan, maybe I can give my Kai Lans a new twist based on your bacon idea!
