Bacon Bok Choy Recipe
A fast and easy side dish for those busy nights. Make it into a main course, simply add rice.

Ingredients
  • 2 pounds baby Bok Choy
  • 4 slices bacon, chopped
  • 1/2 small red onion, minced
  • 1 tsp garlic, minced
  • 1 tsp olive oil
  • 1 tsp red pepper flakes
  • Salt, to taste

Directions
  1. In a large skillet, over medium heat, cook bacon until crispy. Remove and drain the fat, saving 1 tablespoon in the skillet.
  2. Now, add the onion, garlic, olive oil, and red pepper flakes. Stir over medium heat and cook until the onions start to become tender.
  3. Add the bok choy, and put a lid on the pan. Let it cook for 3-5 minutes, then remove the lid; stir and continue to cook until it is tender, but still has a crunch (around 2 minutes).
  4. Add in the bacon, season with salt. Serve piping hot.

This is interesting! I love baby bak choys but I never thought of adding bacon to them, usually just stir-frying with garlic and oyster sauce. I got some leftover bacon and Kai Lan, maybe I can give my Kai Lans a new twist based on your bacon idea!

I see that this recipe was posted two years ago but let me tell you...its still delicious! I made it in addition to a creamy pesto shrimp recipe and oh my was it good. Thank you so much!
