Cajun Shrimp Recipe

Ingredients

1lb medium shrimp cleaned and deveined

1 small green pepper thinly sliced

1 small onion thinly sliced

I used a handfull of sliced fresh mushrooms (optional)

2 teaspoons olive oil

1 14 1/2 oz can italian diced tomatoes

1 to 2 teaspoons cajun seasoning or to taste

1/2 to 1 teaspoon hot pepper sauce ot to taste

some extra water

few splashes of half and half (optional)

some constarch and water (optional)

Pasta of choice

1 to 2 tablespoons of grated montery jack cheese ( optional)

Directions

My cooking methods are not always exact measurements

I used a nonstick skillet

Cook pasta according to package directions

Saute green pepper, onion,garlic and mushrooms in oil until tender

Stir in tomatoes, cajun seasoning, hot pepper sauce

Bring to boil. Reduce heat and simmer 5 minutes, at this time I added a bit more water .

At this time I added shrimp, few splashes half and half and a bit of cornstarch mixed with a bit of water.

Cook shrimp 5 or 6 minutes until shrimp turns pink and mixture thickens.

Serve over pasta
