Cajun Shrimp

- 1lb medium shrimp cleaned and deveined shopping list
- 1 small green pepper thinly sliced shopping list
- 1 small onion thinly sliced shopping list
- I used a handfull of sliced fresh mushrooms (optional) shopping list
- 2 teaspoons olive oil shopping list
- 1 14 1/2 oz can italian diced tomatoes shopping list
- 1 to 2 teaspoons cajun seasoning or to taste shopping list
- 1/2 to 1 teaspoon hot pepper sauce ot to taste shopping list
- some extra water shopping list
- few splashes of half and half (optional) shopping list
- some constarch and water (optional) shopping list
- pasta of choice shopping list
- 1 to 2 tablespoons of grated montery jack cheese ( optional) shopping list
How to make it
- My cooking methods are not always exact measurements
- I used a nonstick skillet
- Cook pasta according to package directions
- Saute green pepper, onion,garlic and mushrooms in oil until tender
- Stir in tomatoes, cajun seasoning, hot pepper sauce
- Bring to boil. Reduce heat and simmer 5 minutes, at this time I added a bit more water .
- At this time I added shrimp, few splashes half and half and a bit of cornstarch mixed with a bit of water.
- Cook shrimp 5 or 6 minutes until shrimp turns pink and mixture thickens.
- Serve over pasta
