Comprehensive Retrospective Soup

- 1 cup navy beans cooked in chicken stock shopping list
- 1 cup rice cooked in chicken stock shopping list
- 1 onion, chopped fine shopping list
- 2 stalks celery, chopped shopping list
- 1 large clove garlic, crushed shopping list
- 1 T olive oil shopping list
- 1/2 pound smoked turkey sausage, quartered, sliced, and browned shopping list
- 1 cup frozen sliced okra shopping list
- 1 cup frozen mixed vegetables shopping list
- 1 can diced tomatoes shopping list
- chicken stock shopping list
- V-8 juice shopping list
- smoked paprika, to taste shopping list
- salt & pepper, to taste shopping list
How to make it
- Sweat the onions in the olive oil in a large pot.
- Add the garlic & celery, stir and allow to cook a bit more.
- Add the sausage, diced tomatoes, a bit of chicken stock and V-8 juice (1/2 - 1 cup each), smoked paprika (I like LOTS), salt and pepper.
- Cover and simmer over low heat to allow flavors to develop.
- Add the cooked rice, beans.
- Add the frozen okra and mixed vegetables.
- Cook to just heat through so the veggies stay crisp.
- Taste, and adjust seasonings.
- I added a dash of creole seasoning and a few drops of McIlhenny's chipotle sauce to my serving.
- I'm eating it right now and I think it's great!

Yum love all the veggies and the v8! What kind of sausage did you use? Like a turkey kielbasa? I wish it would get super cold here and make something like this that much more comforting!
