Chipolte Cornbread Recipe

Ingredients

1 cup Fiber One original bran cereal

1 cup cornmeal

1 cup all-purposed flour

2 tsp baking powder

1 tsp baking soda

1 tsp salt

1/2 tsp chili powder

1 1/4 buttermilk

1/4 cup barbecue sauce

2 Tbsp finel chopped canned chipotle chiles in adobo sauce

2 Tbsp vegetable oil

1 egg

Directions

Heat oven to 400 degrees.

Spray 8 inch square pan with cooking spray

In large bowl, stir together cereal, cornmeal, flour, baking powder, baking soda, salt, and chili powder; set aside

In medium bowl, stir together remaining ingredients.

Stir into cereal mixture and pour into pan.

Bake 25 to 28 minutes or until golden brown.

Serve warm
