How to make it

  • Mix salad/salsa ingredients.
  • Mix dressing ingredients using a food processor or shake in jar. I usually let this sit at room temperature for about a half hour to let the flavors get friendly.
  • Add to salad/salsa mixture.
  • Can be served chilled or at room temperature.

    I have a similar recipe, and it goes fast with a crowd! May I suggest that you drain and rinse the black beans, as the bean liquid adds nothing to the dish, and you can get rid of a lot of the sodium found in canned goods.
    Diced avocado is also great in this dish and it makes a wonderful salsa with good sturdy corn chips.

    The dressing on this salad sounds great, Im having Advocado salad today with homemade hummus & I reckon this dressing is just the ticket:-))

    My husband will love this recipe. Only problem is I might have to use canned corn as I haven't been too impressed with the quality of fresh corn in England.
