Citrus Coconut Cake

Lovely and moist, great for the christmas season
Ingredients
- 125g unsalted butter shopping list
- 1 cup castor sugar shopping list
- 1 tablespoon lemon rind shopping list
- 1 tablespoon lime rind shopping list
- 2 lightly beaten eggs shopping list
- 1 cup self raising flour shopping list
- ¾ desiccated coconut shopping list
- 1 cup milk shopping list
How to make it
- In a bowl beat butter and sugar until light and creamy
- Add rinds and eggs, mix well
- Fold in flour and coconut, alternating with the milk until just combined
- Pour into cake tray and cook for 45-50min at 180C
