Potato Leek and Fennel Soup

- 1/2 stick unsalted butter shopping list
- 2 cups leeks, sliced shopping list
- 2 cups fennel, sliced shopping list
- 56 ounces chicken stock shopping list
- 4 cups potatoes, diced shopping list
How to make it
- Saute the leeks and fennel in butter.
- Add the stock and the potatoes.
- Bring to a boil.
- Reduce heat.
- Simmer until potatoes are tender.
- Puree mixture in a food processor OR blender.
- Reheat if necessary.
- Season to taste with salt and pepper.
