Ingredients

How to make it

  • Saute the leeks and fennel in butter.
  • Add the stock and the potatoes.
  • Bring to a boil.
  • Reduce heat.
  • Simmer until potatoes are tender.
  • Puree mixture in a food processor OR blender.
  • Reheat if necessary.
  • Season to taste with salt and pepper.

    My Russian grandmother used to be amazed at the potatoes I could eat as a kid! We'll get along just fine, sun.. Thanks so much for your five, my friend.

    Wonderful post Lorraine. This weekend the fact that it's near December hit me, and even though it's not as cold in Vegas as it was in the mountains on the east coast, I'm finally ready to start my winterly habit of homemade soups and breads 24/7. Fennel is one of my favorite veggies. I can't wait to try your recipe for this lovely soup.
