Serve it hot, it's potato/leek/fennel soup. Serve it chilled or at room temperature, it becomes the very French vichyssoise. We love this either way!

Wonderful post Lorraine. This weekend the fact that it's near December hit me, and even though it's not as cold in Vegas as it was in the mountains on the east coast, I'm finally ready to start my winterly habit of homemade soups and breads 24/7. Fennel is one of my favorite veggies. I can't wait to try your recipe for this lovely soup.
