How to make it

  • Soften yeast in 1/4 cup warm water.
  • In large bowl combine molasses,salt,instant coffee and butter.
  • Add hot water and stir until molasses and coffee is dissolved.
  • Cool to lukewarm.
  • Stir in rye and whole wheat flour,beat well.
  • Add softened yeast and fennel seed,mix well.
  • Stir in enough all purpose flour to make a soft dough.
  • Cover and let rest about 10 minutes.
  • Knead...Kneading bread dough always seemed therapeutic to the soul.
  • Knead the dough on floured surface till smooth and satiny(about 10 mintutes).
  • Place dough in a lightly greased bowl,turn to grease surface.
  • Cover and let rise in warm place till double in size.
  • Punch down.
  • Divide in two portions,place in greased loaf pans.
  • Cover and let rise in warm place until double in size.
  • Remove cover.
  • Bake in hot oven at 375 degress for about 30 to 35 minutes.
  • If you llike a soft crust,brush with butter.
  • The Aroma of fresh baked bread and the pure pleasure of that first bite...Heaven!!
