Thai Chicken Thighs In The Crock Pot Recipe

Ingredients
  • 6 chicken thighs
  • 32 ounces canned diced tomatoes
  • 1/3 cup creamy peanut butter
  • 1 medium belle pepper sliced
  • 1 medium white onion sliced
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 cups rice

Directions
  1. In crock pot add sliced pepper and onion to bottom of crock pot.
  2. Add chicken things.
  3. In bowl mix diced tomatoes, peanut butter and red pepper flakes.
  4. Pour over chicken thighs and cook 9 hours then serve over rice.

I am a Thai food fan, but I did not care for this dish, found it bland and uninspiring. Ended up just eating the chicken and discarding the sauce.
