~~A very easy, rich mushroom bisque that's simple enough for every day, but also impressive enough for company. This is fantastic served in sourdough bread bowls. :)

Ingredients
  • 1 lb fresh mixed mushrooms, sliced
  • 1 cup butter
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken stock
  • 1 pint half and half (room temp)
  • 1 t hot sauce
  • 1/2 cup corn starch
  • salt and pepper

Directions
  1. Saute onion and mushrooms in butter until tender, adding garlic about half way through
  2. Add corn starch and stir and cook til smooth and bubbly, to make a roux
  3. Slowly add chicken stock and stir and cook until it begins to thicken and corn starch is all dissolved.
  4. Slowly add half and half, salt, pepper and hot sauce and cook on medium low until heated through. Do not boil!

Ok....this was wonderful! And I used fat free 1/2 and 1/2...and only 1 stick of butter and it was still rich and creamy. Mr. SLJ loved it! Thank you Keni!
