Easy Tomato Chickpea Soup Recipe
Really easy -- and very tasty!

Ingredients
  • 1 can chick peas drained
  • 1 28 oz can tomatoes (with juice)
  • 1 bottle roasted red peppers, drained
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 tbsp olive oil
  • 1/2 tsp red pepper flakes
  • 1 tsp oregano
  • 2 cups vegetable or chicken broth
  • salt and pepper to taste

Directions
  1. Saute onion and garlic in hot oil for 3 minutes
  2. Purree all other ingredients in food processor or blender
  3. Heat over low heat in a pot
  4. Serve with fresh basil and sour cream, if desired.
