Avocado Melt

- 1 ripe avocado shopping list
- 1/2 red onion, chopped shopping list
- 1 tsp lemon or lime juice shopping list
- 1 clove garlic, minced (optional) shopping list
- 1 small tomato, chopped and seeded shopping list
- any other veggies you'd like to add (my favourite is some sauteed mushrooms) shopping list
- 1/4 cup shredded cheddar cheese shopping list
- 4 slices swiss cheese shopping list
- 4 slices egg or Italian bread (anything that's thicker than regular out-of-the-bag sliced bread will do) shopping list
How to make it
- In a bowl, mush up the avocado with a fork (leaving it still fairly chunky). add in onion, lemon/lime juice, garlic, tomato, any other veggies you'd like and shredded cheddar cheese. Mix together with fork.
- Put 1/4 of the avocado mix on each slice of bread and spread evenly. Place one slice of swiss cheese on top of each.
- Broil for approximately 3 minutes until swiss cheese is melted and bubbly (if you'd like to heat it through instead of just melting the cheese on top, first bake for 5 minutes at 325, and then broil for an additional 2-3 minutes, until swiss cheese is melted and bubbly)

A wonderful sammich aluminum! I bet this is super yummy with sauteed mushrooms as well.

I have to try this one. It sounds great. I can't wait for my garden tomatoes to get ripe. This will be a great way to enjoy them.
