Ingredients

How to make it

  • In a bowl, mush up the avocado with a fork (leaving it still fairly chunky). add in onion, lemon/lime juice, garlic, tomato, any other veggies you'd like and shredded cheddar cheese. Mix together with fork.
  • Put 1/4 of the avocado mix on each slice of bread and spread evenly. Place one slice of swiss cheese on top of each.
  • Broil for approximately 3 minutes until swiss cheese is melted and bubbly (if you'd like to heat it through instead of just melting the cheese on top, first bake for 5 minutes at 325, and then broil for an additional 2-3 minutes, until swiss cheese is melted and bubbly)

I have to try this one. It sounds great. I can't wait for my garden tomatoes to get ripe. This will be a great way to enjoy them.
