Out of this World Zucchini Soup

- 2 teaspoons olive oil shopping list
- 1 medium white onion chopped shopping list
- 1/2 pound zucchini sliced shopping list
- 2 teaspoons salt shopping list
- 1/4 cups vegetable stock shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/8 teaspoon freshly ground black pepper shopping list
- 1/2 pound tofu shopping list
- 1 tablespoon olive oil shopping list
- 1/4 cup vegetable broth shopping list
How to make it
- Sauté first four ingredients then add stock, nutmeg and pepper.
- Cover and simmer 20 minutes then remove from heat and cool 5 minutes.
- Blend tofu, oil and vegetable broth in blender or food processor until smooth and creamy.
- Stir blended tofu mixture into sautéed vegetables then heat but do not boil.

Oh, healthy and delicious. Another great one! This will be perfect for January - when I will try to loose all that Christmas weight (well, I will try - succeeding is a different story)
