Ingredients

2 teaspoons olive oil

1 medium white onion chopped

1/2 pound zucchini sliced

2 teaspoons salt

1/4 cups vegetable stock

1/2 teaspoon nutmeg

1/8 teaspoon freshly ground black pepper

1/2 pound tofu

1 tablespoon olive oil

1/4 cup vegetable broth

Directions

Sauté first four ingredients then add stock, nutmeg and pepper.

Cover and simmer 20 minutes then remove from heat and cool 5 minutes.

Blend tofu, oil and vegetable broth in blender or food processor until smooth and creamy.

Stir blended tofu mixture into sautéed vegetables then heat but do not boil.

Looks really good. Maybe I can trick my husband again. Every now and then I throw some tofu in a dish and he usually doesn't notice but he can't quite pick out the familiar flavor.
