How to make it

  • Sauté first four ingredients then add stock, nutmeg and pepper.
  • Cover and simmer 20 minutes then remove from heat and cool 5 minutes.
  • Blend tofu, oil and vegetable broth in blender or food processor until smooth and creamy.
  • Stir blended tofu mixture into sautéed vegetables then heat but do not boil.

    Looks really good. Maybe I can trick my husband again. Every now and then I throw some tofu in a dish and he usually doesn't notice but he can't quite pick out the familiar flavor.
