Cinnamon Bread Recipe
A moist, flavorful breakfast or snack bread. The addition of the vanilla pudding adds a real smoothness to it.

Ingredients
  • 3 cups flour
  • 2 cups sugar
  • 1 5.1-oz. package of instant vanilla pudding
  • ½ tsp. baking soda
  • 1½ tsp. baking powder
  • ½ tsp. salt
  • 2 tsp. cinnamon
  • 1½ cups milk
  • ¼ cup vegetable oil
  • 3/4 cup applesauce
  • 2 eggs, beaten
  • 1 tsp. vanilla

Directions
  1. Preheat oven to 325F. Grease two 5x9-inch loaf pans with nonstick spray.
  2. In a mixing bowl, combine flour, sugar, pudding mix, baking soda, baking powder, salt, and cinnamon. In a separate bowl, stir together milk, vegetable oil, applesauce, eggs, and vanilla. Pour milk mixture into flour mixture, mixing until well blended. Divide batter (relatively) evenly between the two loaf pans.
  3. Bake at 325F for 60 minutes, or until toothpick inserted near center comes out clean. Let cool in pans on wire rack.
