Ingredients

How to make it

  • Beat eggs with half and half, season with salt and pepper and set aside.
  • In skillet, melt 1 to 2 teaspoons of butter.
  • Once butter melts, place bread in skillet.
  • Turn bread to absorb butter on both sides.
  • Add more butter and repeat for second piece of bread.
  • Return bread to skillet(over med. heat) and brown lightly on each side, place one slice of bread on plate.
  • Add remaining butter to pan and melt.
  • Stir in eggs and cook,(over med. high heat) stirring often until cooked(do not overcook as it will dry out eggs) This step takes only a few minutes.
  • Divide eggs equally and place equal amounts on top of each slice of bread(toast).
  • Serve.

    this also makes a great breakfast sandwich. You can add a few pieces of crisp bacon or sausage and yum o!

    Oh yeah, butter-soaked bread, toasted in a frying pan...my kind of breakfast! I have to try this - I know it will be good (anything with that much butter has to be excellent, in my book!!).
