Ingredients

How to make it

  • preheat oven to 350F
  • Combine dry ingredients well
  • Combine wet ingredients well
  • Blend both together until combined
  • Stir in nuts and fruit to blend well.
  • Divide batter into 4 mini pans and bake in oven until golden and tested done from 25 to 30 minutes.
  • Cool in pans for gift giving or remove from pans to cool if desired.
  • These freeze well.
  • Powdered sugar or a frosting if desired when serving
  • I don't double recipe, jsut do in single batches as needed.

    Fantastic! I didn't have orange juice or an orange, so I used milk and almond extract and left the cranberries whole. My sister and I sat down to eat a piece and ended up eating all of one of the four mini loaves. We were so bad, but it was sooo good!! Definitely 5 stars!

    This is such a lovely "5"FORK!!!!! recipe
    for Cranberry Bread ~ I really like using
    'mini-pans', which I do quite often~ I also
    found a good quality 'mini-muffin' pan and the
    'muffins' are shaped like a 'bundt-cake'~
    I used it recently for baking 24 'mini'
    Carrot Cakes for a Ladies Brunch~ I put a 'dab' of
    Coconut/Pecan Frosting in the little hole in the middle ~ They were a 'Hit' with the Ladies~
