Ingredients
  • 1 3/4 cups graham flour (I use all-purpose flour)
  • 1/2 cup cold butter, cubed
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 1 1/4 cups bacon, chopped and cooked
  • 1 1/4 cups Emmental cheese, shredded OR cheese of your choice
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh pepper
  • 2 to 3 teaspoons parsley, thyme and basil, chopped
  • 1 cup heavy cream

Directions
  1. Have prepared pie shell ready in a 9" quiche pan.
  2. Preheat oven to 400 degrees F.
  3. Combine the cooked bacon and shredded cheese in a mixing bowl.
  4. Whisk the eggs together in a small bowl.
  5. Add eggs to bacon/cheese mixture and stir.
  6. Add salt, pepper and herbs.
  7. Stir.
  8. Add cream.
  9. Using a whisk, combine all ingredients GENTLY.
  10. Pour egg mixture into prepared pastry shell.
  11. Bake for 35 minutes OR until golden on top.

I like it better with bacon too. Personally, I don't like basil with eggs, so I would use tarragon. Whenever I think of making quiche, it attracts me until I realize how much fat is actually in that slice. Sigh.
