How to make it

  • Have prepared pie shell ready in a 9" quiche pan.
  • Preheat oven to 400 degrees F.
  • Combine the cooked bacon and shredded cheese in a mixing bowl.
  • Whisk the eggs together in a small bowl.
  • Add eggs to bacon/cheese mixture and stir.
  • Add salt, pepper and herbs.
  • Stir.
  • Add cream.
  • Using a whisk, combine all ingredients GENTLY.
  • Pour egg mixture into prepared pastry shell.
  • Bake for 35 minutes OR until golden on top.

    I like it better with bacon too. Personally, I don't like basil with eggs, so I would use tarragon. Whenever I think of making quiche, it attracts me until I realize how much fat is actually in that slice. Sigh.
