Holiday Herbed Rib Roast Recipe
a rib roast seasoned with a herb paste and a holiday entree for beef lovers

Ingredients
  • 5 lbs of beef rib roast
  • Balsamic vinegar for brushing
  • Herb paste:
  • 2 Tbs each of finely minced fresh minced garlic, fresh thyme
  • 1 Tbs fresh finely chopped rosemary
  • 2 Tbs salt
  • 1 Tbs olive oil

Directions
  1. Brush roast all over with balsamic vinegar
  2. Mix paste ingrdients and coat entire roast
  3. Place fat side up
  4. Preheat oven to 450F
  5. Roast for 15 minutes
  6. Reduce heat to 350f and roast 1 1/2 to 2 hours or until meat registers 135F for medium rare, 150F for medium
  7. Let sit for 15 minutes, remeber roast will continue to cook when out of the oven and temp will rise 5 to 10 degrees more
  8. Note: use a insta read to check temperature near end of roasting time
  9. Carve by slicing against grain
