How to make it

  • Brush roast all over with balsamic vinegar
  • Mix paste ingrdients and coat entire roast
  • Place fat side up
  • Preheat oven to 450F
  • Roast for 15 minutes
  • Reduce heat to 350f and roast 1 1/2 to 2 hours or until meat registers 135F for medium rare, 150F for medium
  • Let sit for 15 minutes, remeber roast will continue to cook when out of the oven and temp will rise 5 to 10 degrees more
  • Note: use a insta read to check temperature near end of roasting time
  • Carve by slicing against grain
