Holiday Herbed Rib Roast

- 5 lbs of beef rib roast shopping list
- balsamic vinegar for brushing shopping list
- herb paste: shopping list
- 2 Tbs each of finely minced fresh minced garlic, fresh thyme shopping list
- 1 Tbs fresh finely chopped rosemary shopping list
- 2 Tbs salt shopping list
- 1 Tbs olive oil shopping list
How to make it
- Brush roast all over with balsamic vinegar
- Mix paste ingrdients and coat entire roast
- Place fat side up
- Preheat oven to 450F
- Roast for 15 minutes
- Reduce heat to 350f and roast 1 1/2 to 2 hours or until meat registers 135F for medium rare, 150F for medium
- Let sit for 15 minutes, remeber roast will continue to cook when out of the oven and temp will rise 5 to 10 degrees more
- Note: use a insta read to check temperature near end of roasting time
- Carve by slicing against grain
