How to make it

  • Combine flour,baking powder,baking soda and salt,set aside.
  • In bowl cream butter and sugar,beat until fluffly.
  • Beat in eggs and alternately,flour mixture and pineapple juice.
  • Fold in vanilla,coconut,macadamia nuts and crushed pineapple.
  • Spoon into 2 greased and floured 8x4x2-1/2" loaf pans.
  • Bake in 350 degree oven for 55 to 60 minutes or until cake tester inserted in center comes out clean.
  • Cool on wire rack
  • Note:may glaze with rum sugar glaze if you wish
