Black Bean and Fresh Corn Tacos

- 1 small fresh hot chili seeded and chopped shopping list
- 2 medium tomatoes diced shopping list
- 1/3 cup chopped yellow bell pepper shopping list
- 1 tablespoon lime juice shopping list
- 2 teaspoons chopped fresh cilantro shopping list
- 1/2 teaspoon salt shopping list
- 1-1/2 tablespoons vegetable oil shopping list
- 1 medium coarsely chopped onion shopping list
- 1 clove garlic minced shopping list
- 30 ounces canned black beans with liquid reserved shopping list
- 1 tablespoon distilled white vinegar shopping list
- 2 cups fresh corn kernels shopping list
- 1 cup shredded pepper jack cheese shopping list
- 12 flour tortillas shopping list
- Thin avocado slices shopping list
- Fresh cilantro sprigs shopping list
How to make it
- In medium bowl combine chili, tomatoes, bell pepper, lime juice, cilantro and salt.
- Heat oil in a wide frying pan over medium heat.
- Add onion and garlic then cook stirring often until onion is soft and lightly browned.
- Reserve 1/2 cup of the liquid then drain and rinse beans.
- Add beans to onion mixture with the reserved liquid and vinegar.
- Coarsely mash beans with a spoon or large fork.
- Preheat oven to 400.
- Spoon beans onto a large ovenproof platter spreading into a 10” oval.
- Layer with corn and cheese then bake 10 minutes.
- Meanwhile wrap tortillas in foil and heat in oven until hot about 10 minutes.
- Garnish bean mixture with avocado and cilantro then spoon mixture into tortillas.
- Serve with tomato mixture.
