How to make it

  • In medium bowl combine chili, tomatoes, bell pepper, lime juice, cilantro and salt.
  • Heat oil in a wide frying pan over medium heat.
  • Add onion and garlic then cook stirring often until onion is soft and lightly browned.
  • Reserve 1/2 cup of the liquid then drain and rinse beans.
  • Add beans to onion mixture with the reserved liquid and vinegar.
  • Coarsely mash beans with a spoon or large fork.
  • Preheat oven to 400.
  • Spoon beans onto a large ovenproof platter spreading into a 10” oval.
  • Layer with corn and cheese then bake 10 minutes.
  • Meanwhile wrap tortillas in foil and heat in oven until hot about 10 minutes.
  • Garnish bean mixture with avocado and cilantro then spoon mixture into tortillas.
  • Serve with tomato mixture.
