Black Bean And Fresh Corn Tacos Recipe
This is an amazing dish that I got from a good friend a few years back. It is so full of great flavors and so easy to make. Enjoy

Ingredients
  • 1 small fresh hot chili seeded and chopped
  • 2 medium tomatoes diced
  • 1/3 cup chopped yellow bell pepper
  • 1 tablespoon lime juice
  • 2 teaspoons chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1-1/2 tablespoons vegetable oil
  • 1 medium coarsely chopped onion
  • 1 clove garlic minced
  • 30 ounces canned black beans with liquid reserved
  • 1 tablespoon distilled white vinegar
  • 2 cups fresh corn kernels
  • 1 cup shredded pepper jack cheese
  • 12 flour tortillas
  • Thin avocado slices
  • Fresh cilantro sprigs

Directions
  1. In medium bowl combine chili, tomatoes, bell pepper, lime juice, cilantro and salt.
  2. Heat oil in a wide frying pan over medium heat.
  3. Add onion and garlic then cook stirring often until onion is soft and lightly browned.
  4. Reserve 1/2 cup of the liquid then drain and rinse beans.
  5. Add beans to onion mixture with the reserved liquid and vinegar.
  6. Coarsely mash beans with a spoon or large fork.
  7. Preheat oven to 400.
  8. Spoon beans onto a large ovenproof platter spreading into a 10” oval.
  9. Layer with corn and cheese then bake 10 minutes.
  10. Meanwhile wrap tortillas in foil and heat in oven until hot about 10 minutes.
  11. Garnish bean mixture with avocado and cilantro then spoon mixture into tortillas.
  12. Serve with tomato mixture.
