Ingredients

How to make it

  • Heat 2 tablespoons oil in saute pan over medium high heat.
  • Add onions and saute until translucent.
  • Add the brown sugar.
  • Saute slowly until onions begin to color.
  • Lower heat and slowly cook until golden brown, approximately 10 minutes.
  • Remove from heat.
  • Allow to cool.
  • Transfer half the mixture to a food processor.
  • Pulse until you have a smooth puree.
  • Place the carmelized onions in a bowl.
  • Add mustard, honey, vinegar and oregano.
  • Whisk.
  • Drizzle 1/2 cup olive oil into the bowl slowly, still whisking.
  • Whisk until all olive oil is emulsified.
