Caramelized Onion Vinaigrette

- 1 large yellow onion, chopped shopping list
- 1 tablespoon brown sugar shopping list
- 1 tablespoon Dijon mustard shopping list
- 1 tablespoon honey shopping list
- 3 tablespoons red wine vinegar shopping list
- 1 teaspoon dried oregano shopping list
- 1/2 cup olive oil plus 2 tablespoons shopping list
How to make it
- Heat 2 tablespoons oil in saute pan over medium high heat.
- Add onions and saute until translucent.
- Add the brown sugar.
- Saute slowly until onions begin to color.
- Lower heat and slowly cook until golden brown, approximately 10 minutes.
- Remove from heat.
- Allow to cool.
- Transfer half the mixture to a food processor.
- Pulse until you have a smooth puree.
- Place the carmelized onions in a bowl.
- Add mustard, honey, vinegar and oregano.
- Whisk.
- Drizzle 1/2 cup olive oil into the bowl slowly, still whisking.
- Whisk until all olive oil is emulsified.
