Ingredients
  • 1 large yellow onion, chopped
  • 1 tablespoon brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 3 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 cup olive oil plus 2 tablespoons

Directions
  1. Heat 2 tablespoons oil in saute pan over medium high heat.
  2. Add onions and saute until translucent.
  3. Add the brown sugar.
  4. Saute slowly until onions begin to color.
  5. Lower heat and slowly cook until golden brown, approximately 10 minutes.
  6. Remove from heat.
  7. Allow to cool.
  8. Transfer half the mixture to a food processor.
  9. Pulse until you have a smooth puree.
  10. Place the carmelized onions in a bowl.
  11. Add mustard, honey, vinegar and oregano.
  12. Whisk.
  13. Drizzle 1/2 cup olive oil into the bowl slowly, still whisking.
  14. Whisk until all olive oil is emulsified.
