Molasses-Apple Bread

- 2 1/4 cups flour shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon salt shopping list
- 1-1/2 teaspoons cinnamon shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/8 teaspoon cloves shopping list
- 1/3 cup shortening shopping list
- 2/3 cup brown sugar, packed shopping list
- 2 eggs shopping list
- 1/2 cup dark molasses shopping list
- 2/3 cup whole milk shopping list
- 2 cups peeled, cored, diced apples (about 2 medium) shopping list
- 1/2 cups chopped walnuts, pecans, or macadamia nuts (optional) shopping list
How to make it
- Sift together flour, baking soda, salt, cinnamon, nutmeg and cloves.
- In a larg mixing bowl, cream shortening with sugar.
- Add eggs, one at a time, beating well after each addition.
- Add molasses and mix well. (TIP- if you coat your measuring cup with some non-stick spray before pouring molasses, it won't stick.)
- Add flour mixture alternately with milk.
- Fold in the apples and nuts.
- DO NOT OVER MIX.
- Pour mixture into a greased and floured 9x5" loaf pan.
- Bake at 350 degrees for 60-70 minutes, depending on your oven.
- Cool on rack for 10 minutes.
- Remove from pan and cool completely.
- Wrap loaf in foil and store overnight before slicing OR help yourself to some right away!

ooooh soooo healthieeeeeee thanks for sharing - I'd like to try it with spelt flour as wheat isn't very friendly.
