How to make it

  • Dissolve yeast in warm water in bowl.
  • Stir in milk,sugar,salt,nutmeg,egg yolks,1/2 cup butter and 3 cups of flour.
  • Beat until smooth.
  • Stir in enough remaining flour to make dough easy to handle.
  • Turn dough onto lighlty floured surface,knead until smooth and elastic,about 6 minutes.
  • Place in a greased bowl,turn to grease all sides.
  • Cover,let rise in warm place until double.
  • Prune Filling:
  • 1-1/2 Cups pitted prunes
  • 1/3 Cup Sugar
  • 1 teaspoon Grated Lemon Peel
  • 1 Tablespoon Lemon Juice
  • 1/ teaspoon Ground Cinnamon
  • Simmer prunes in just enough water to cover until tender,about 30 minutes,drain,puree or chop very fine.Stir in remaining ingredients,cool.
  • Poppy Seed Filling:
  • 3/4 Cup Poppy Seeds
  • 1/2 Cup Whipping Cream
  • 1/3 Cup Honey
  • 1 Tablespoon Cornstarch
  • 1 Tablespoon Butter
  • Heat all ingredients to boiling,stirring constantly.Boil and stir for about 1 minutes,cool.
  • Apricot Filling:
  • Take the apricots from the recipe"Aperitif",puree and add 1/3 cup sugar and 1/8 teaspoon ground mace,heat until sugar dissolves,cool.
  • Divide dough into 4 equal parts,cut each part into 8 equal pieces.Shape each piece into a ball,place about 2" apart on greased cookie sheets.Make a depression in center of each.Fill with about 1 Tablespoon of fillings.Let rise until double about 30 minutes.Bake in a 350 degree oven until light brown about 10 to 15 minutes.Brush with Butter,Cool on wire racks.
