Ingredients
  • 2 Package Dry Yeast
  • 1/2 Cup Warm Water
  • 3/4 Cup Scaled milk,cool
  • 1/3 Cup Sugar
  • 1 teaspoon salt
  • Dash of nutmeg
  • 2 Egg Yolks
  • 1/2 Cup Butter,softened
  • 4-3/4 Cups Flour
  • Prune,Poppy Seed and Apricot Fillings

Directions
  1. Dissolve yeast in warm water in bowl.
  2. Stir in milk,sugar,salt,nutmeg,egg yolks,1/2 cup butter and 3 cups of flour.
  3. Beat until smooth.
  4. Stir in enough remaining flour to make dough easy to handle.
  5. Turn dough onto lighlty floured surface,knead until smooth and elastic,about 6 minutes.
  6. Place in a greased bowl,turn to grease all sides.
  7. Cover,let rise in warm place until double.
  8. Prune Filling:
  9. 1-1/2 Cups pitted prunes
  10. 1/3 Cup Sugar
  11. 1 teaspoon Grated Lemon Peel
  12. 1 Tablespoon Lemon Juice
  13. 1/ teaspoon Ground Cinnamon
  14. Simmer prunes in just enough water to cover until tender,about 30 minutes,drain,puree or chop very fine.Stir in remaining ingredients,cool.
  15. Poppy Seed Filling:
  16. 3/4 Cup Poppy Seeds
  17. 1/2 Cup Whipping Cream
  18. 1/3 Cup Honey
  19. 1 Tablespoon Cornstarch
  20. 1 Tablespoon Butter
  21. Heat all ingredients to boiling,stirring constantly.Boil and stir for about 1 minutes,cool.
  22. Apricot Filling:
  23. Take the apricots from the recipe"Aperitif",puree and add 1/3 cup sugar and 1/8 teaspoon ground mace,heat until sugar dissolves,cool.
  24. Divide dough into 4 equal parts,cut each part into 8 equal pieces.Shape each piece into a ball,place about 2" apart on greased cookie sheets.Make a depression in center of each.Fill with about 1 Tablespoon of fillings.Let rise until double about 30 minutes.Bake in a 350 degree oven until light brown about 10 to 15 minutes.Brush with Butter,Cool on wire racks.
