Spinach Maria From Miss Olivias Table

Ingredients
- 2 (10 oz.) packages frozen spinach, thawed and lightly drained (I use one 16 oz. bag of frozen chopped spinach) shopping list
- 1 (10.25 oz.) can of cream of mushroom soup shopping list
- 1 medium onion, chopped shopping list
- 1 cup mayonnaise shopping list
- 4 oz. pepper jack cheese, grated shopping list
- 1 cup cheddar cheese, grated shopping list
- TOPPINGS - Your Choice shopping list
- French's fried onion rings shopping list
- Shoestring potatoes shopping list
- slivered almonds shopping list
- buttered bread crumbs shopping list
How to make it
- Generously butter a 2-quart baking dish.
- Preheat oven to 350 degrees.
- Combine spinach and all the remaining ingredients.
- Pour mixture into the prepared baking dish.
- Bake 35 minutes.
- Top as desired and bake an additional 8 to 10 minutes or until the topping begins to brown.
- Cook's note: I add the cheddar cheese to the mixture and scatter the pepper jack on top
