Ingredients
  • Dough
  • 1 cup water (105-115 degrees F)
  • 2 pkgs active dry yeast
  • 1/3 cup nonfat dry milk
  • 1/3 cup honey
  • 1/3 cup butter
  • 1 tsp salt
  • 1 tsp ground cardamon
  • 2 eggs
  • 3-1/2 to 4 cup bread flour
  • 1/2 cup chopped candied fruit
  • 1/2 cup chopped red and green candied cherries
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts or pecans
  • POWDERED SUGAR ICING
  • 1 TBSP BUTTER
  • 1 TBSP MILK
  • 1 CUP POWDERED SUGAR
  • 1/4 TSP VANILLA OR ALMOND EXTRACT

  2. Kitchen Aid electric mixer
  3. Thermometer
  4. Dissolve yeast in water in a large electric mixing bowl. Add honey, butter,salt, cardomon,eggs and 2 cups of flour. Blend together on low speed. Beat 4 minutes on med speed.. Strir in the candied fruit, cherries, nuts, and raisens. Add remaing flour to make a soft dough. Knead for 10 minutes or until dough is soft and elastic. Place in a greased bowl,cover and let rise in a warm place. (I use my over the stove microwave with the light on). Temp 80 -85 degrees/ until double in size. Punch down at let rest covered for 15 minutes. Divide dough into 4 equal portions. If you have a scale that would be 3/4 pound. Put in 4 greased loaf pans (3-1/2" x 7-1/2')
  5. Cover and let rise in a warm place until double in size. Place loaf pans on on cookie sheet and bake in a preheated oven 350 degrees for 25 minutes or until golden brown. (At this point I use a instant read digital thermomter to 200 degrees to make sure the center is done. Brush top with unsalted butter and cool. When cool frost with Powder sugar icing and top with chopped red and green cherries.
