How to make it

  • Scoop out centers of peeled onions leaving 1/4" thick shell then chop centers to equal 1-1/2 cups.
  • Blanch cases for 5 minutes and turn upside down to drain.
  • Sauté chopped onion in 1/4 cup butter until lightly colored then add sausage.
  • Cook a few more minutes then stir in 1-1/4 cups bread crumbs which have been soaked in cream.
  • Simmer 5 minutes then add parsley, thyme, salt and pepper.
  • Fill shells with stuffing and put in a buttered shallow dish.
  • Pour stock and wine around them and bring to boil on top of stove.
  • Bake at 350 for 45 minutes basting several times then transfer onions to serving dish.
  • Reduce juices by half then pour over onions and sprinkle with additional chopped parsley.
