Green Rice

- 1 pound tomatillos husked washed and coarsely chopped shopping list
- 1 yellow onion coarsely chopped shopping list
- 3 garlic cloves shopping list
- 1-1/2 cups fresh cilantro leaves shopping list
- 1-1/4 cups chicken stock shopping list
- 2 tablespoons canola oil shopping list
- 2 cups long grain rice rinsed shopping list
- 2-1/2 teaspoons salt shopping list
How to make it
- In a deep bowl combine the tomatillos, onion, garlic, cilantro and stock.
- Using an immersion blender puree the mixture until smooth then set aside.
- In a saucepan over medium heat warm the oil.
- Add the rice and salt and cook stirring constantly for 3 minutes.
- Add the tomatillo mixture and stir to combine.
- Bring to a boil then cover and reduce heat to low.
- Cook until all liquid has been absorbed and the rice is tender about 25 minutes.
- Remove from the heat and let stand for 10 minutes then transfer to a serving bowl.
