Ingredients
  • 1 1/2 cups flour
  • 1/2 cup plus 1 Tablespoon sugar(plus more for topping)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/3 cup shortening(Crisco)
  • 3 Tablespoons milk
  • 1 large egg yolk
  • 1 teaspoon vanilla
  • *favorite jelly* - I like grape.
  • **toothpicks**

Directions
  1. Mix all ingredients with electric mixer or by hand if you feel like it.
  2. Refrigerate dough at least 1 hour.
  3. Roll out between sheets of plastic wrap.
  4. Cut out with round biscuit cutter or cookie cutter
  5. Add 1/2 teaspoon jelly. Fold over and seal with a fork.
  6. Pierce cookies with toothpicks to prevent jelly from coming out the sides. You can add less jelly if you prefer.
  7. Sprinkle tops of cookies with sugar.
  8. Parchment paper lined baking sheets make easy cleanup.
  9. Bake at 350 degrees for about 10 minutes.
  10. Keep an eye on these so they don't overbake.

These cookies didn't turn out well. The flavor was great. How can you go wrong with PB&J? The problem was in the folding.

The dough would break at the fold. Didn't matter if the dough was rolled out thick or thin.

The second problem is the cookie wouldn't set up hard enough, when cooked, to be picked up. The bottom of the cookie would turn out a nice light golden brown to golden brown color when baked from 10 through 15 minutes incrementally.

I can't see baking this again until the problem with the recipe is fixed.


I guess the peanut butter that is used makes a big difference... also making sure the dough is chilled. Sorry this didn't turn out well for pointsevenout. I appreciate the feedback.
