P B and J Cookies

Peanut butter & jelly all in one delicious cookie! Enjoy - prep time doesn't include chill time.
Ingredients
- 1 1/2 cups flour shopping list
- 1/2 cup plus 1 Tablespoon sugar(plus more for topping) shopping list
- 1/2 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1/2 cup creamy peanut butter shopping list
- 1/3 cup shortening(Crisco) shopping list
- 3 Tablespoons milk shopping list
- 1 large egg yolk shopping list
- 1 teaspoon vanilla shopping list
- *favorite jelly* - I like grape. shopping list
- **toothpicks** shopping list
How to make it
- Mix all ingredients with electric mixer or by hand if you feel like it.
- Refrigerate dough at least 1 hour.
- Roll out between sheets of plastic wrap.
- Cut out with round biscuit cutter or cookie cutter
- Add 1/2 teaspoon jelly. Fold over and seal with a fork.
- Pierce cookies with toothpicks to prevent jelly from coming out the sides. You can add less jelly if you prefer.
- Sprinkle tops of cookies with sugar.
- Parchment paper lined baking sheets make easy cleanup.
- Bake at 350 degrees for about 10 minutes.
- Keep an eye on these so they don't overbake.
