Tangy Oven Barbequed Chicken Recipe
Another bbq chicken recipe! This is VERY good.

Ingredients
  • 1/2 cup jellied cranberry sauce
  • 1/4 cup no salt added tomato paste
  • 2 tablespoons prepared mustard
  • 1 teaspoon cider vinegar
  • 4 skinned chicken breast halves

Directions
  1. Preheat oven to 375*F.
  2. Line a 11x7x2 inch baking dish with aluminum foil.
  3. Combine first 4 ingredients in container of an electric blender.
  4. Cover and process until mixture is smooth.
  5. Brush mixture evenly over both sides of chicken; reserve remaining mixture.
  6. Place chicken, bone side up, in prepared dish.
  7. Bake uncovered for 25 minutes.
  8. Turn chicken; brush with remaining cranberry mixture.
  9. Bake uncovered and additional 20 minutes or until chicken is tender.

Alterations


During cranberry season, I make my own whole berry sauce and have it on hand. I am going to try this recipe with my sauce as a substitution for the jellied cranberry sauce. I'll let you know how it turns out!
